Chicken and sweet potatoes in the oven with feta cheese

Ingredients
  

  • 2 red onions
  • 800 g Sweet potatoes
  • 1 garlic clove
  • 1 tbsp freshly squeezed lime juice
  • 1 1/2 tbsp liquid honey
  • 1 tbsp Japanese soy
  • 2 tbsp finely grated ginger
  • approx. 600 g
  • approx. 600 g chicken thigh fillet preferably with skin
  • 1 tbsp salt
  • 3 tbsp olive oil
  • 150 g feta cheese
  • 1 sliced fresh or pickled jalapeño 1 fresh equals 3 tablespoons pickled

Method
 

  1. Preheat the oven to 225°C.
  2. Peel the onion and wash the sweet potatoes. Cut the onion and sweet potato into wedges and place on a baking sheet.
  3. Peel and finely chop the garlic, peel and grate the ginger and mix with lime juice, honey and soy. Mix with the chicken and place on the baking sheet. Season the chicken and vegetables with salt and drizzle with the oil. Roast in the middle of the oven for about 25 minutes until the sweet potatoes have browned and the chicken is cooked through and has an internal temperature of 72°C.
  4. Start Timer 00:25:00
  5. Top with crumbled feta cheese and jalapeño.
