Banana Pancakes

I discovered a while ago that I'm sensitive to gluten and so is my son.
I also really enjoy a good pancake, and this is the recipe I use for our weekly pancake breakfast 🙂
Very simple and very delicious!
Servings:4 pancakes
Course:Breakfast, Snack

Ingredients
  

  • 6 eggs organic if possible
  • 1 medium sized banana
  • small pinch sea salt
  • cinnamon optional

Method
 

  1. 1. Place all ingredients in a bowl.
  2. 2. Whisk it all with a blender or handheld mixer until it becomes a smooth batter.
  3. 3. Melt some butter in a frying pan using low to medium heat, pour about 3-4 ounces of batter (about 100ml) and spread it evenly in the pan.
  4. 4. When the bottom of the pancake is starting to brown and there's no runny batter on the top, flip it over and fry for about another 30 seconds.

Notes

When I make this I pour using a deciliter cup measure (100ml) so I get similar thickness to each pancake.
Feel free to add anything else to your batter, for example chocolate chips, blueberries or other spices to make them more to your liking (or add it as toppings).
