Carrot Salad

This is something I've found very helpful for overall health and healing.
Dr. Ray Peat was an American biologist and expert in thyroid health. One food that he argued is particularly powerful in thyroid healing is raw carrots for their ability to cleanse the intestinal tract.
He advised to eat 1-2  raw carrots a day. This salad makes it a bit more enjoyable and by grating the carrot you enhance it's benefits.
Additional benefits of raw carrots are:
Help eliminating toxins
Aiding digestion
Help remove excess estrogen

Ingredients
  

  • One large organic raw carrot per person
  • One teaspoon of organic olive oil or organic coconut oil
  • One teaspoon of apple cider vinegar
  • 1 glove of raw garlic optional, add for anti fungal support
  • A pinch sea salt and black pepper

Method
 

INSTRUCTION
  1. Grate the carrot lengthwise to ensure the fibers are long and intact.
  2. Add the oil, vinegar, and seasoning in a bowl and mix with a fork.
INSTRUCTION
  1. Grate the carrot on the finest setting on the grater.
  2. Peel the apple, remove the core and grate it on the slightly bigger setting.
  3. Mix it all together in a bowl.
