Coconut Fish Curry

Ingredients
  

  • 1 lb/500g white fish like cod or tilapia, cut into chunks
  • 1 can 14 oz/400g coconut milk
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tbsp fish sauce
  • 1 lime juiced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Method
 

  1. In a pan over medium heat, warm the olive oil. Add the chopped onion and minced garlic, and cook until they are softened, about 5 minutes.
  2. Stir in the curry powder, ground cumin, and turmeric. Cook for 1-2 minutes until the spices become fragrant.
  3. Pour in the coconut milk and fish sauce. Bring the mixture to a gentle simmer.
  4. Add the fish chunks to the pan. Cook for 8-10 minutes, or until the fish is fully cooked and flakes easily.
  5. Squeeze the lime juice over the curry and stir gently.
  6. Serve the coconut fish curry over cooked jasmine rice or a side dish of your choice
  7. Garnish with fresh cilantro before serving.
