Gelatin Gummies

This is a super easy snack to make for both you and your children. My son loves these, to the point that I need to hide them so he doesn't finish them all in one sitting...!
Besides being simple to make these delicious gummies also provide all three macronutrients (protein, carbohydrates and fat), which makes it a very balanced snack.

Ingredients
  

Recipe 1
  • ¾ cup lemon juice orange juice or coconut water
  • 1 cup frozen raspberries or any fruit of your choice
  • 3 tablespoons honey or maple syrup optional
  • ¼ cup grass-fed gelatin
  • coconut oil to coat the baking dish
Recipe 2
  • 4 cups liquid such as puréed fruit smoothie, coconut water, etc.
  • 1 cup of filtered water
  • 6 Tbsp grass-fed gelatin
  • Gummy molds or a pan or bowl
  • Raw honey to taste optional

Method
 

Recipe 1
  1. Place lemon juice and raspberries in a blender and blend on high until completely mixed. Pour into a saucepan.
  2. Add the honey and gelatin and whisk together. You will have a thick paste. Turn the heat on low, and continue to whisk the mixture for 5-10 minutes, until it becomes thin and everything is incorporated. Take off the heat.
  3. Pour into silicone molds or a small baking dish. Set in the refrigerator for at least 1 hour to firm up.
  4. If you used a small baking dish as a receptacle, cut into bite-size squares. Otherwise, remove gummies from their molds and enjoy!
Recipe 2
  1. Bloom 6 tbsp of grass-fed gelatin in 1 cup of water by sprinkling the gelatin over top (just thickens and rehydrates the gelatin)
  2. Heat 4 cups of liquid such as puréed fruit, smoothie, coconut water etc. and mix in the bloomed gelatin, you can add sweetener of choice if you want to! I added raw honey
  3. Let it all dissolve, turn off the heat and add to a bowl or pan or silicone mold to set! let set for atleast 2-4 hours and then enjoy! Good for 5 days in the fridge but they definitely won’t last long.
