Slow Cooker Lemon Garlic Butter Chicken

If you need a super easy recipe during busy times, you'll love this one! It's quick and all of us enjoyed it, including my toddler.

Ingredients
  

  • 400 g Boneless Chicken Thighs
  • 1 Tbs Garlic Powder
  • 1 Tbs Onion Powder
  • 1/2 tsp Paprika
  • 4 Garlic Gloves sliced or minced
  • 1 tsp Italian Seasoning or Pizza Herbs
  • 50 g Butter diced
  • Zest of 1/2 lemon
  • Juice of 1 lemon
  • 1/3 cup/80g broth
  • 1/2 tsp Cayenne Pepper optional
  • salt and pepper to taste
  • Chopped Parsley for garnish optional

Method
 

  1. Place chicken in the bottom of the slow cooker.
  2. Combine broth, lemon juice and zest. Pour over the chicken thighs.
  3. in a small bowl, mix Italian seasoning, garlic powder, onion powder, paprika, cayenne, salt and pepper. Sprinkle the mix over the chicken thighs. Top with the fresh garlic and chopped butter.
  4. Cover the slow cooker and cook for 3-4 hours on HIGH or 6-8 hours on LOW.
  5. Garnish with parsley and serve with your favorite side dish, for example rice, cauliflower rice, zucchini noodles, pasta or potatoes.
