Marry Me Chicken Orzo (Risotto)

Ingredients
  

  • - 1 tbsp ghee tallow or butter
  • - 500g chicken breast or boneless chicken thighs diced
  • - 3 garlic cloves minced
  • - ½ cup sun-dried tomatoes drained (80g)
  • - 1 tsp oregano
  • - 1 tsp paprika
  • - 1 tsp dijon mustard optional
  • - 1 cup orzo/ risoni OR 200g arborio rice uncooked
  • - 2 1/2 cups/600ml chicken stock
  • - 1/2 cup/120g cream
  • - 2 cups/60g baby spinach
  • - 1/3 cup/30g parmesan cheese grated

Method
 

  1. Heat the olive oil in a large pan over medium high heat. Add the chicken and cook for 2-3 minutes.
  2. Add the sun-dried tomatoes, garlic, Dijon mustard, spices, and season with salt and pepper. Cook for 3-4 minutes then add the orzo, stock and cream, stir well.
  3. Cover with a lid, reduce the heat and simmer for 10-15 minutes or until the orzo is tender.
  4. Stir regularly to ensure the pasta doesn’t stick to the bottom of the pan. Add an additional 1/4 cup of stock if needed.
  5. Once the orzo is cooked, remove from the heat and add the spinach and parmesan. Mix through until the parmesan has melted.
  6. Divide between serving bowls and garnish with additional parmesan.
